Curried Mutton

Curried Mutton
(serves 4-6)
Ingredients
- 100g pack of SEASONED Curried Blend
- 2 kg Mutton leg/shoulder on the bone.
- 1 small red onion
- ½ red bell pepper
- ½ yellow pepper
- 1 sweet potatoe cubed into (optional)
- Fresh thyme (4 pcs)
- Pimento seeds (optional)
- 4 fresh bay leaves
- ¼ - ½ scotch bonnet pepper.
- 200 - 400ml cold water (usually 300ml)
Method
- Marinade the mutton with SEASONED Curried Blend
- Thinly slice the onion & peppers.
- Add fresh produce (except sweet potato) to the mutton and stir well
- Put mutton & fresh produce in a pot & pour in the water.
- Quickly bring to the boil then simmer for approximately 1.5 - 2 hours (do not allow water to evaporate)
- 15/20 mins before end of cook add sweet potato
- Meat should be tender but still on the bone.
Serve with rice and peas or with boiled yam, green bananas and cornmeal dumplings.
